Watermelon Salad

I studied sculpture in art school and try to bring that sensibility to a dish; I’m always trying to come up with fun ways to cut things that will make them feel a little different. Here, I cut a big round slab of watermelon and use it as a base to build the salad on top of. It’s a fun way to present a salad when entertaining. You can use slabs from a small watermelon for individual servings or big rounds on a platter for a family-style presentation.
