Tomatoes are at their peak deliciousness right now — juicy and flavorful. So, this month, we’re featuring tomato recipes (the simpler, the better), starting with a three-ingredient tartine from Emilie Raffa of The Clever Cookbook. Here’s how to assemble it…
Tomato and Hummus Tartines
By Emilie Raffa, author of The Clever Cookbook
All you need is five minutes to make this simple, healthy snack. Creamy hummus and juicy tomatoes are the perfect compliment to the nutty flavor of sprouted grain bread. If you’re entertaining, serve these toasts in smaller wedges as an appetizer for guests. I thought I’d share this idea with you because it’s just me on a normal day. Chickpeas. Target. Mom stuff. You can make this in a snap and it’s a great way to incorporate succulent, seasonal tomatoes into your world.
Recipe: Tomato and Hummus Tartines
Serves 4
You’ll need:
4 slices of sprouted grain bread
1 large ripe tomato, thinly sliced
4 tbsp hummus
Salt and pepper
Small basil leaves to garnish
Lightly toast the bread, then spread the hummus evenly onto each piece. Top with 1-2 slices of tomato. Sprinkle with salt and pepper. Garnish with basil leaves to taste.
Thank you so much, Emilie! Your cookbook is lovely.
P.S. More recipes, including a three-ingredient tomato sandwich and caramelized onion and tomato focaccia.
