Olive oil pumpkin bread–sub OO for whatever oil or butter you usually use, add 1 cup applesauce if baking gluten-free, add 3-5 spoons espresso powder, chopped apples or pears or chocolate chips if desired, and dust with coarse sea salt when baked. A moody, dark, almost savory treat.
Also: swapping out tank tops for sweaters, and sandals for ankle boots. The best.
So interested in this! I’m new to gluten-free baking and am wondering about the applesauce. Is that in addition to all the ordinary ingredients or does it replace an ingredient? Do you just use a 1:1 gf substitute flour like Bob’s Red Mill?
Hey Betsy–GF stuff is often dry and crumbly, so I add applesauce to almost everything I bake. Canned pumpkin can work well, too. Cheers.
Thank you for this recipe!! Are you just using 1:1 GF baking flour? If not, can I just do that? I know myself and no matter how easy it is I’ll never make my own GF mix using X number or different flowers plus some xanthan gum. I’m a lazy baker but an enthusiastic eater ;)

You can sub a 1:1 gf flour for pretty much any recipe—but this time of year, Trader J has a great gf pumpkin bread mix to which I make the above amendments. King Arthur’s is good, too! My 1:1 go-to’s are Trader Joe’s or Bobs Red Mill as I’m allergic to nuts and coconut. My fave from-scratch recipe was at Food 52, but I can’t locate it. But seriously—just tweaking a mix for texture and flavor is so easy! Nobody ever guesses. See also: add a bag of frozen cranberries and a bunch of cinnamon to a boxed gf brownie mix for instant standing ovation. Sea salt sprinkled on top after baking XO

Tiss, I have a few Uniqlo collarless down vests from Poshmark and ThredUp, I like the slim shape and simple profile as they layer UNDER a coat or jacket nicely with no bulk or chunky parts. Sometimes I even sleep in one for an extra bit of cozy.
A warm sweater is key.

I am ready for fall! While it’s still warm in Northern California, I am planning on a squash tart or perhaps a pumpkin bread over the weekend. I have also started wearing my “tech bro” fleece vest at work …. sure sign of fall.

Nothing is more perfect (imho) than the apple crisp from Joy of Cooking. Although, I leave out the spices. It’s SO easy and SO good!!!! You can also toss in some cranberries if you want to make it extra.
The unexpected thing I like to do with apples is throw them in an omlette. Sautee some apples and onions, toss in some herbes de province, use as omlette filling with your favorite cheese. Yom.

Baked apples! Core and cut a strip of peel off the top. Mix brown sugar, butter, walnuts, dried cranberries and cinnamon and stuff in the core. Bake 4-6 covered in an 8 x8 pan at 350 for 45-60 minutes, basting with the juice. Make sure that the apple has softened–that is when it is ready. Serve with vailla ice cream.
SUZ!!! Even before seeing Deb’s question, I came here to say that Joy of Cooking’s apple crisp is the best apple recipe, period. (I follow it exactly, including spices. ) It is perfection. xox
Apple butter! I plan to make some this weekend.
Basically cook down apple butter, then blend it smooth, then transfer it to a baking pan w sides, stir in some brown sugar and bake it at 325 (I think?) until it is the caramelly consistency you like. But be forewarned, this will use a lot of apples and yield but a few jars of apple butter. Worth it, tho!
