Kale and Granny Smith Apple Salad

We love a good kale salad, don’t you? So, to conclude our month of salads, we’re featuring a kale recipe from Sarah Aldrich of Well and Full. Made with avocado, crisp apple slices and an easy dressing, this salad is perfect for when it’s too hot to turn on the oven. Here’s how to toss it together…

This kale and apple salad has the ideal medley of flavors and textures. The tangy dressing provides the perfect pairing to crunchy kale, tart apple and creamy avocado. Topped with protein-rich chia seeds and almonds, this salad is not only delicious but incredibly healthy and filling.

Kale and Granny Smith Apple Salad

Recipe: Kale and Granny Smith Apple Salad
Serves 1-2

You’ll need:

1 bunch Tuscan kale, chopped
1 granny smith apple, sliced
1 avocado, peeled and cubed
Slivered or chopped almonds
Fresh ground pepper
Chia seeds
1/4 cup coconut yogurt
1/2 lemon

To make the dressing, combine yogurt and lemon juice in a bowl and mix well with a fork.

This step is optional, but recommended: take your kale and a little of the dressing, and massage dressing into kale for a few minutes with hands. This helps break down the toughness of the kale, and makes it much easier to digest.

To assemble salad, toss together kale, apple, avocado and almonds.

Serve in bowls, topping with chia seeds, fresh ground pepper and as much dressing as you like.

  8. I love how healthy this salad is. Usually salad recipes will have a ton of cheese and oil in them…not a fan. But this one looks really yummy :)

      Well, take into consideration that there is a lot of fat in this salad (avocado, almonds, coconut yogurt, chia). Even if these are considered healthy fats, fat will always be high in calories (9 cal per gram).

  10. This looks perfect for a summer lunch and it looks super easy to prepare! I love kale salads and often mix in whatever I have in the fridge or leftover from the night before. I like to finely chop the kale leaves to make them easier to chew. Thanks for sharing.
