Samin Nosrat, the San Diego-born, Iranian-American chef, is one of the biggest stars on Netflix right now. Samin has been hailed as “America’s next great cooking teacher” by Alice Waters, and her best-selling book, Salt, Fat, Acid, Heat, is now the most streamable show on television. To know her isn’t just to love her, it’s to adore her. Here, Samin gives us a peek behind the curtain, including a life-changing thigh-chafe spray and the products that transformed her curly hair…

How would you describe your relationship to beauty?

I never had a relationship to beauty until recently. I felt very inept at all things ‘girly and pretty’; I didn’t own a mascara until three years ago. My first pedicure was only a few years ago — and I’m 38! Growing up, I was unsure about my looks, and my defense mechanism became to reject caring about it all together. Then I grew up and I was like, well, I’m a cook; I have to be tough and that also meant not caring about looks. It was like, ‘I get a pass; cooks don’t do makeup. Cooks pull their hair back.’

How much of your childhood played into this beauty reluctance?

On one hand, our Persian family culture was all about appearance. Perfect eyebrows. Shahs of Sunset. I grew up with my mother saying, ‘I’m going to save up to fix your nose and your chin.’ That was our culture; it was actually a gesture of love when she said that. My mom’s dream would have been my saying, ‘Teach me everything about makeup.’ But I felt if I was rejecting traditional femininity, then I had to stick to my guns. When in reality, I was just too embarrassed to turn around and ask about it.

How has hair, makeup, all of it changed since you’ve had your Netflix show?

I still go to Sephora and I’m like YIKES. There are entire aisles that I feel like I don’t have permission to enter. But the show changed things for sure. I had to do an audition shoot, and they hired a makeup artist. (Remember, I am a person who didn’t own mascara until three years ago.) I loved this makeup artist. She said, ‘The first thing you need to learn is to take really good care of your skin. Invest all of your energy in your skin. If you don’t have good skin, you have nothing to work with.’ Before then I, maybe, washed my face, then did some oil or moisturizer. I didn’t know how soft my skin could be with an exfoliant! So, I went down the rabbit hole. I found out about The Ordinary. My friend Greta told me to get P50 Recherche. Check. Greta said to get Manuka Honey and rub it on your face. Check. She said to get Dr. Alkaitis face oil. Check. I bought a Clarisonic brush but retired it for a Konjac sponge — this one I learned not from Greta but from listening to Forever35 beauty podcast — a sentence I never thought I’d say.

Can we talk about your beautiful hair?

Yes, please! My friend Greta Caruso and I went to Cuba in 2012 on a cultural exchange. Greta, who also has curly hair, brought so many hair products. I couldn’t believe my eyes! I had always been tortured by my curly hair, and Greta was like, ‘I won’t travel without my DevaCurl.’ I was intrigued. Greta then told me about dry hair cuts, etc. It was like I was finally liberated to be a person who spends money and invests in her hair — and it has been priceless.

What everyday products do you use?

To get the most out of my curly hair, the answer is Deva everything! Since curly hair is naturally dry, I do everything I can to preserve moisture, which includes washing my hair as infrequently as possible. When I do wash, I use Deva Curl No-Poo, rinse it out and detangle as I go, then get my hair as wet as possible again and work in gobs and gobs of One Condition, which I do not rinse out. Then, while my hair is still sopping wet, I work in Ultra Defining Gel and then use an old T-shirt to very, very carefully dry my hair. Since I usually wash at night, especially when I have an early call time, I’ll then wrap my hair in an Aquis drying turban. I also do my best to extend my curls between washes by using a little spritz of water and DevaCurl Super Cream to bring things back to life.

And dry cuts?
Now that I’ve had my hair cut dry, it makes SO MUCH SENSE — of course curls do best when they are cut dry, when the stylist can see what she is cutting! I can never go back to a wet cut!

It’s refreshing how open you are about everything.

Oh, that’s nothing! Let’s talk about my hairiness. In my twenties, I found a laser place to get my mustache and chin hairs removed; and it totally backfired. Maybe it was hormonal changes, who knows, but suddenly I had even more wiry hairs on my chin. I went through phases like, ‘Screw the world, I’m not going to do anything about it!’ And then getting really upset about it.

Where did you land?

When I met the esthetician Carrie Lindsey, who I live for, and she said to try laser again; that now there are machines that actually work on different skin types. So, I went to someone who works only on black women. These hairs had been plaguing my chin forever and finally they were gone. I want to tell the Cup of Jo readers: Keep looking until you find somebody who works. My go-to spot in Oakland is The Skin Studio.

Your smile makes everyone else smile. It’s contagious.

Here’s how I take care of my smile: I take my antidepressants and I try to sleep. Oh wait, you mean my teeth! Before the show, I was like I gotta whiten my teeth. I got the dentist version of Crest White Strips and they changed nothing. I was like, whatever.

Any other products you’ve experimented with lately?

There’s Skin Slick spray. I chafe like hell in my thigh area. I enjoy wearing a dress now — because I’m enjoying my femininity. Sometimes I’ll walk 70 blocks a day in New York. And chafe-walking is the most painful walking. I’m clearly not embarrassed talking about things most people are embarrassed about, and I told everybody about my chafing situation. A friend said professional dancers use a special silicone spray. It’s also for triathletes to get their suits on more easily. It has changed my life.

Now, a food question! What ingredients do you always have in your kitchen?
Okay, here’s the deal: I have been traveling so very much that I don’t get to cook as often as I would like. So, I make sure I always have a freezer full of frozen veggies and stock, a pantry filled with cans of beans, tons of grains and pastas and canned fish, and a fridge full of Parmesan and condiments. That way, when I get home from a long trip and I don’t have it in me to go out for groceries, I can always make a simple pasta with tuna and canned tomatoes and chili flakes, or some rice and dal, or sautéed frozen broccoli with garlic and chilies, or even just a can of black beans heated up with onion powder, hot sauce and cumin, topped with grated cheese and some cilantro from the garden.

At the end of the day, do you think it matters? Feeling beautiful?

For me, I think feeling pretty is just one other dimension of feeling good about myself. So much of the work I do in therapy is assigning self-worth and believing that I have value. I can’t say with complete honesty that I look at myself and say, ‘I feel beautiful.’ Hopefully one day before I die I’ll be able to do that. I guess — because of great lighting — there are some scenes in the show where I say, ‘Wow, I look really pretty.’ And that’s not a thought I have ever had about myself. I’m still a little bit shocked by those feelings. So many of my struggles have been about my own preconceived notions of who I am — and every time I break a little barrier, that feels profound.

    Apart from being a woman, I do not relate to Samin in any way (we have very different cultural backgrounds and I do not experience 99,9% of the issues she discusses), nor have I ever heard of or seen her show. That being said, I love her and her style and energy, just from this quick read! If the thoughts that we leave here ever reach the interviewees, than I would like to say – Samin, you are beautiful and wonderful and deserve all the confidence to be even more so! I have never done her hair justice, on a good day it looks like a frizzy disco ball. She is starting to care what she looks like, and I know I need to step up my hair game.     When I was 18 my mother said I needed a nose job, what mother does that? Your mom, Samin, and mine.! When I had my nose done at 24 I made my mom pay for half of it. All my friends said “get your boobs done, then no one will look at your nose”. No thanks, I like my small boobs. I made the same comment to my daughter and she was so offended. Like mother like daughter. I loved this story so much and I don’t cook. Thank you Cup of Joy for introducing us to so many amazing women.

    I finished Samin’s show a few days ago, and I am so delighted to see her featured of CoJ!!! And a beauty uniform at that! Throughout the series, I repeatedly thought about how radiant she is. Samin exuded self-assuredness, intelligence, and a contagious zest for life and good food. The best kind of beauty there is. Also, I love that she’s open about therapy. We all need it!     Thigh chafing is the worst! I found an amazing solution on a blog that is super easy. Mix equal parts coconut oil and corn starch. Put in a jar and apply in the morning. Lasts all day and i find the skin gets softer.

    I had tried the shorts but find them too hot in the summer. Try it – it’s gold!

    I absolutely loved Samrin’s willingness to share her commitment to mental health through anti-depressants and therapy. So many of us are struggling with issues of self-worth, but put a ton of energy into hiding it. Thank you for removing the shame – the struggle is enough.

    Another great anti-chafing idea is 1. wearing shorts under dresses or 2. monistat has an anti-chafing cream that is $7 at walmart. I’ve even used it for my son’s sensitive skin as a baby (yes on top of diaper rash cream or by itself, it is silicone based) and child when we’re going somewhere with lots of walking and its hot and humid out. And it doubles as a silicone base for foundation when getting pictures taken. She DOES have a great smile. I have fine hair that curls and I’ve been telling stylists for years I can use that heavy moisturizer they all think my hair is too fine but it does better the more, thicker moisture.

    The camera man in the shopping trolley!! I NEVER THOUGHT about how they would get those “grocery shopping” shots on TV shows… AND I WORK WITH CAMERA OPERATORS EVERY DAY! Absolutely dying of laughter over here.

    Came here to post a [potentially but unintentionally creepy] comment that Samin was in my dream last night! I read her post last night before bed, and overnight dreamt that my sister needed to take me to meet an aunt that I’d never met before. She was an older version of Samin, but not Samin, and I could fully feel her vibrance and brilliance when I met her. I bet she’s the same way in real life, you can just tell! What a wonderful woman.

    I had no idea who Samin was, and as soon as I finished reading this I sat down and binged the first three episodes of SFAH. Now I’m crushed that there’s only one more – she is SUCH a joy to watch. I’m excited about cooking again and she reminded me that its ok to be thrilled by good food, which is something I think we encourage women not to express in our diet obsessed culture. Also, my husband got choked up watching the Mexico episode where the woman brought her corn to be ground, because his late grandma did the same. Food connects us to so much, doesn’t it?

You can really connect with her voice through her book, but I fell in love with her and her work all over again in the show.     Sanim, I watched your show over the course of a week and loved it! It was SO refreshing to see a travel show where the host spoke a language other than English. You seem like an amazing travel companion. I also have to ask: is that kitchen where cooked in Berkeley *your* kitchen?     As someone who has struggled with acne (and the resulting scarring) it’s always really discouraging to hear makeup artists talk about how essential good skin is for beauty. “You have nothing to work with.” I mean obviously of course take care of your skin but the associated judgments about beauty can be really hard to hear for people with visibly imperfect skin.

It is based on Lorraine Massey’s Curly Girl method. Super informative especially when you are on a tight budget. There are so many hair product options besides Devacurl which isn’t cheap.

    Samin we have the same hair routine! DevaCurl and dry cuts were also a game changer for me. I had given up after I moved to Colorado’s dry climate but this stuff brought me back!

      Haha I noticed them too! I’d guess straight from Iran, where everyone wears stacks of 18k+ bangles. The higher k is much more brilliant in color. Also, they really have the art of sparkle down to a science; intricate cuts and 3D designs into the bangle itself catch the light and create eye catching shimmer from a mile away.

      Samin, you radiate beauty!! Thank you for sharing the invaluable hair tips. My curls and body hair have always been (and still are!!! Arg.) my main beauty concern. It was comforting to read about your familiar trials. :-)

    OMG! I love this woman!!! I had heard of her book but did not know about the Netflix documentary. Absolutely BRILLIANT!!!!! I thought I knew a lot about ingredients and techniques. I know NOTHING! I am obsessed with this show. I’m moving to Italy pronto.. and then I’m moving to Japan. I’m only on the second installment (salt) and will probably also move to the third and fourth locations as well. Thank you COJ. Ironically, I read this post today after running into a friend at the supermarket who mentioned the series. Funny how that happens. We’ve both decided we’re never going to the supermarket again (not possible!) and we’re going to make fresh pasta every night! (not possible) but we can dream, right!?

    I saw the post on instagram and instantly clicked over to the blog- 2 of my favorites- a beauty uniform post + Samin! Looking through the comments I don’t see a single negative post and I think that sums up how awesome Samin is. I devoured SFAH in a day and absolutely loved it. I so hope that she does more things on Netflix as I will happily watch her anytime. She has the most contagious smile and seems like such a genuinely *nice* person! And after watching the Heat episode I made her buttermilk chicken that weekend and it was DELICIOUS. No more rotisserie chickens ever! <3

    Hands down my favorite one! I love the honesty. And I get it about her mother – sometimes moms think they’re doing you a favor with their “honesty” regarding one’s looks, but it can really backfire and cause big damage. So now I constantly tell my daughters that they are beautiful just the way they are. And I will tell them that until the day I die.

    I have yet to see this cookbook or show, but now I’d really like to! She sounds really fun and personable :) Also, I’m 31 and finally walked into Sephora for the first time earlier this year, got hooked up with under-eye concealer samples, and walked in again today to pick up the one that worked best.       I work in Papua New Guinea and have very sporadic and expensive wifi access so Sam light years behind on Netflix but this interview has got me convinced to watch Samin’s show next time I have access to plentiful wifi.

    I got to see Samin interview Yotam Ottolenghi at a live event in Santa Cruz, California the other night. It was so fun. She’s the best. Someone in the audience asked both of them if they had any guilty food pleasures — Yotam’s is trying every single kind of ramen, hee hee. Samin said she doesn’t really associate guilt with food (such a good sentiment, thank you!) but also … she really likes American cheese. And then she gave a hilarious description of peeling it and how it gets all plasticky when you melt it.

    I have been experiencing a similar waking up to all things beauty related and, well, womanhood, lately. I finally like my curly hair, just like her, thanks to devacurl. That was huge. And then I turned 30, and I found out about makeup thanks to youtube. And what a rabbit hole! So much fun!
    And then I have been realizing how much of all of this has to do with confidence. For me, it is not that makeup or a nice hair makes me confident.
    It goes the other way. I needed the confidence in the first place to wear makeup and make myself pretty. Next step: nails!
