Green Pea Hummus

Now that the weather is slowly warming up (even here in Canada), I’m looking for fresh spring recipes—foods that are easy to make, and full of flavor and color. With peas starting to show up in markets, this hummus is the perfect quick recipe. It works well at a party—and is also an amazing sandwich spread or a dip for fresh veggies. (If you can’t get your hands on fresh peas yet, feel free to make with frozen peas.)

Recipe: Green Pea Hummus

Serves 4 generously

You’ll need:

1 cup fresh shelled peas or frozen
1/4 cup fresh cilantro (including stems)
2 tbsp. tahini
2 tbsp. lime juice
2 small cloves or one large clove chopped garlic
1/4 tsp. ground cumin
salt, to taste

Add peas to a small pot with salted water. Bring water to a boil and cook peas until tender, about 2 minutes. Drain and run under cold water for the peas to cool. In small food processor, pulse cooled peas, cilantro, tahini, lime juice, garlic and cumin for 30 to 40 seconds. Season with salt. Serve on top of crackers, as a dip for fresh vegetables or as a sandwich spread. This works well as a base for a cheese or fried egg sandwich. Keeps in a well-sealed container for up to a week in the fridge.
