Oh! Carrot cake whoopie pies! I know my Mr will love these! We tried our first whoopie pie from a dessert truck near 30 rock – and he loved it! So shall definitely give these ones a whirl!

I saw these, immediately went out to buy ingredients, made them, and between my boyfriend and myself – ATE HALF OF THEM. We made ourselves sick. They are SO GOOOOOOD. I tweeked the recipe to be healthier, however, by replacing a quarter cup of butter with a quarter cup of applesauce, and using whole wheat flour instead of white. Next time I make it, I’ll use applesauce only, and honey instead of the two sugars. I have complete confidence that it will still be amazing.
