Buy Fiesta Orange Pepper spice rub on Amazon. Get bone-in, skin-on thighs. Sauté veggies in skillet (peppers, onions) low and slow until carmelized. Liberally coat the thighs in rub and throw in skin down first, cook until toasty brown and flip. So good! You’ll love it!

I prefer chicken thighs over breasts…much more flavorful. One of our go to dinners is baked chicken thighs.. toss/marinate them with olive oil, lemon juice , salt, pepper, herbs…we usually have rosemary, parsley, garlic….. Bake at 400 for 45 min to an hour….you want the skin to be golden and crispy! Serve with rice. My vegetarian daughter always calls it a cheat day when we have baked chicken!

We love this NYT recipe for garlicky chicken thighs. We usually pair with rice, add spinach for some extra greens, and we use boneless thighs–quicker cooking time and I just prefer boneless. Everything is better with chicken thighs and they are less expensive. Fajitas, chicken Marsala, chicken cacciatore, and from my Mom a version of chicken Scarpariello. Chicken, onions, garlic, red peppers, sausage, potatoes, sometime artichoke hearts always peas. Oil, balsamic and chicken broth w salt and pepper and herbs if you have. Even chicken enchiladas.

I also just make a simple greek-style marinade of garlic, olive oil, red wine vinegar and dried oregano and then grill chicken thighs in a grill pan (since I don’t have any outdoor in my NY apartment to really grill!) and it always comes out really great (we usually serve it as “greek bowls” with salad, rice or lemon potatoes, olives, feta and homemade tzatziki)
Also, if you chop thighs instead of breasts for use in stirfries you don’t really have to worry about overcooking and drying them out. I love to make stirfry with green beans or broccolini, chicken thighs, sichuan peppercorns and dried chillies.

And I agree that chicken thighs are delicious, and wow it’s a chicken recipe party in here today. I want to recommend the method of cooking that Samin Nosrat uses for “Conveyor Belt Chicken” because it is simple, fast and delicious. Nom Nom Paleo also has a similar recipe called “Cracklin’ Chicken”. Salt and pepper, high heat in a skillet, 10 minutes, done.
I substitute chicken thighs for breasts in nearly every recipe, and it never goes wrong. Substitute by weight rather than number of pieces, and you may need to fiddle with the cook time a little bit but not as much if they’re boneless.

The Lemony Cluck from Hell’s Backbone Grill in Boulder, Utah is the absolute best (!!!) lemon chicken dish I’ve ever had or made. It’s impossibly tender with the skin on, and I’ve used the marinade to cook a whole chicken (not just the breast or the thighs). “The Immeasurable Place” is the cookbook that they sell, which includes the recipe. If you’re every traveling in southern Utah, then I definitely recommend paying a visit to this restaurant in the heart of Grand Staircase Escalante for lunch/dinner.

My favorite way to cook chicken thighs is Musakhan (or M’sakhan) which are thighs cooked with sumac (a lemony spice) over onions and flatbread. The bread soaks up the spice and juice from the meat and onions – it is so good! As mum got on in years she just didn’t have the energy to mow her front and backyard lawns, then trudge down our driveway (we live on a steep incline) to mow the strip of grass on the sidewalk. So she ripped it all up and replaced it with flowers and plants and lots of other greenery. It brings her so much joy and she finds it far more enjoyable to potter around in her garden, collecting her seasonal flowers and gifting cuttings to her friends!

A real easy way to make Indian Chicken Fry is to marinate thighs in red chilli powder, turmeric powder and lemon juice, and shallow fry in coconut oil. Skin on, bone in.

Second that! Did the city allow them to rip out the sidewalk pavement? It’s beautiful but is it their property? The small town where I grew up had corner plots that businesses planted gardens in the summer and decorated fir trees in the winter with their advertisements included. But of course they left them unpaved. The bigger city I live in now allows tree donations where you can pay the maintenance and planting fee and have your name displayed. The huge garden here is way more impactful and beautiful and would be great and simple to maintain in front of your house but curious about the ownership and negotiating that may have been involved.

Hey there, if you scroll up to the author’s comment (in the instagram post) you’ll see that they were able to rip out 400 square feet of concrete to make room for this. Sounds like it’s part of a San Francisco initiative authorizing more green spaces. Looks like it’s still at least as wide as a standard ADA sidewalk, so maybe that was their limit of what they could go down to. I always double it, as it is a super tasty lunch the next day. Don’t be scared by the anchovies, they add such depth in flavor, and I have served to folks who don’t like fish and would never know that there were anchovies in the dish. It’s definitely a winner.

I grew up in Singapore where we’d fight each other for the chicken thigh. Imagine my shock when I moved to England for university and my English flatmate told me her family only ate white meat gave the chicken thighs to the cat! We started roasting lots of chicken after that revelation, she took the chicken breast, I’d take the thigh. Harmony in the house.
Sub Singapore for Malaysia and England for Scotland and… SAME. I never could understand how breasts were the most expensive and thighs/drums were in the bargain bin.
Also, salmon fish heads went for almost nothing and are AMAZING in soups and curries.

Chicken thighs are my favorite. With the bone-in, skin-on ones I love rubbing them with olive oil, garlic, rosemary, sage and thyme and tucking lemon slices under the skin and baking them. I use the boneless, skinless ones for stews. I am honestly appalled (APPALLED!) when anyone tells me they eat chicken breasts rather than thighs! Thighs are so much easier to cook and so tasty and juicy. I love Alison Roman’s olives-and-onions one from Dining In (it’s the cover recipe), and this one from the NYT is a “staff meal” at a restaurant: spicy and easy.

The Lazy Genius has a recipe called Change-Your-Life-Chicken that is absolutely incredible!! (And she has entire podcast episodes dedicated toward getting it exactly right.) 500 degrees seems like a typo, but it makes the chicken skin so crispy and delicious. And the juices from the thighs drip down and season the bed of veggies beneath. (Which get perfectly crispy but surprisingly not burnt from the high temp.) Yes! I was coming to post about the sheet pan tikka! I’m making it tomorrow. I always buy chicken thighs instead of breast meat – cheaper and more flavorful.
Also I like to marinate them in red curry paste – just throw some of the paste in a ziploc bag with the thighs chopped into chunks and rub in – refrigerate overnight. Then the next day batter and fry them for Thai spiced fried chicken nuggets. So good. I use the rest of the curry paste to make a sauce with coconut milk and veggies to eat with the chicken.
You MUST make this chicken thigh recipe. It is so delicious, it truly will change your (dinner) life!!

One of the many things on my gratitude list right now is a big yard, lilacs, trees with fuzzy catikins, vegetable garden, gravel paths to rake (gosh how soothing that is), crab apples waiting to burst out pink blooms, rhubarb……. So many birds. It’s still snowing and cold, but little buds of green on the lilacs and knobs of pink on rhubarb plants poking up out of the dirt. I know all of these things are going to bring solace and joy in the coming months, no matter what happening in the world around.

You can do it as it, or mix it up with different add-ins when you add the shallots–sometimes it is olives and slices of lemon, other times cherry tomatoes. Onions are an easy sub if you don’t have shallots.
The broth is to die for and excellent with mashed potatoes if you are feeling decadent, but equally good with rice. Steam some veggies in the last few minutes and dinner is served!
Martha Stewart has a Crusty Mustard Chicken recipe…I make the sauce, brush it on the chicken, cover with Panko bread crumbs and bake at 375 degrees for about 45 mins. ??

RE: Chicken thighs. For simplicity I like to prep either brussel sprouts or broccoli and either delicata squash or butternut squash or sweet potatoes. Toss all in olive oil, salt, pepper and whatever herbs I have on hand. Put on sheet pan. Then toss chicken thighs in the bowl I used for the vegetables. Nestle in with the vegetables on sheet pan. Roast for, IDK, 20 to 30 minutes on like 400 until everything is done. Oh, I’ll also roast some onions or garlic.
These two recipes are on repeat in our house and I always use Chicken thighs. Enjoy!

Oh gosh, we are long time chicken thigh devotees in our house! They are better than breasts in almost every situation! My favorite, which we are having tonight, is bone in, skin on, roasted- 415 degrees for about 50 min, on a rack or broiler pan so the schmaltz can drain down into the pan- take them out and remove the thighs. Then add to the pan a squeeze of half a lemon, a chopped clove of garlic, a handful of chopped green olives, and enough olive oil to make enough sauce to pour over. The skin gets so crispy and delicious and the chickeny, olivey sauce is good enough to make us all lick our plates at the end! Ugh, I’m drooling just thinking about it!
