The Best Healthy Tacos You’ll Ever Have

I have a weakness for tacos. Living in California, they’re abundant, typically cheap, and vibrantly flavorful. When I cook at home, I strive for healthy dishes that are rich in both flavor and color—and these tacos win on all fronts. The spice rub is so simple and so versatile: you can use it with veggies, tofu, shrimp, fish or chicken.

Recipe: The Best Healthy Tacos
Serves 4

For the salsa:
2 cups cherry tomatoes, quartered
4 green onions, thinly sliced
3 tbsp. fresh cilantro, chopped
1/2 small jalapeño, finely diced
Juice of 1 lime
1/2 tsp. sea salt

For the salmon:
1 tbsp. paprika
1 tbsp. cumin
1 tsp. chipotle chile powder
1/2 tsp. sea salt
12 oz. wild Alaskan salmon, in filets
Corn tortillas for serving

Feta cheese, crumbled
Lime slices

What to do:

Preheat oven to 400 degrees.

First, make the salsa. In a mixing bowl, combine the cherry tomatoes with the green onions, cilantro, jalapeño, lime juice and sea salt. Set aside until ready for use.

Next, combine the paprika, cumin, chipotle and sea salt to make the rub. Generously season the salmon with the rub. You may have a little left over—you can save it in a sealed glass jar in the pantry for future use.

Lightly grease a medium baking dish and place the salmon fillets inside, skin side down. Roast for about 12-15 minutes, until the salmon is cooked through but not dry. (Cooking times will vary depending on the thickness of your fillet—so be sure to check after about 10 minutes.) Remove salmon from heat and set aside to cool for a few minutes. Flake the salmon with a fork for serving.

Prepare the tacos on a single corn tortilla with the salmon first, followed by the salsa, feta cheese, and a cilantro/lime garnish if desired. Enjoy!

  8. Why hello there, beautiful fish tacos! Yum! These look gorgeous and I bet they taste even better! Loving all the flavors. =)

  9. So, basically I changed everything: I had shrimp, and salmon was prohibitively expensive. I already had a rub that was *close*, one of my kids hates tomatoes, so I did 1/2 mango and 1/2 tomato in the salsa and pulled his out before adding the tomato. I bumped the nutrition with a bunch of Romaine in each taco, and I grabbed flat-leaf parsley at the store instead of cilantro, because I am not smart.

    And yet, these tacos were amazing. I LOVED the feta with the seafood, and my whole family (from 5 to 36) declared them delicious. So, while I cannot say this particular recipe is the most delicious tacos I’ve ever eaten (because we changed so much), I can definitely say the recipe is a blueprint for awesomeness.

  10. wild alaskan salmon is not the only choice. it’s expensive and only available part of the year. farmed salmon (e.g. from norway) is perfectly healthy (despite what craziness you read in the media), a more economical choice and available year round.

  14. We do tacos or tostadas every week! Fresh salsa makes a huge difference! I also do either avocado slices or homemade guac, too. These seem so simple and yummy, I will definitely have to try them! Bet these would be great with shrimp or chicken, too.

  17. feta on tacos is SOOO delicious! definitely try it if you haven’t yet! tacofino, out on the west coast in BC, makes the BEST tacos…and they come with feta and lots of cilantro. the black beans ones are so good!
    will have to try this recipe for sure! yum!

  20. We have Taco Tuesdays at our house–I’ve never made fish tacos at home though. These look delicious! I have a couple vegetarian fillings that I like–one with black beans and sweet potatoes, and the other with black beans, corn, and zucchini.

  23. Everyone who’s weirded out by the feta: traditional (authentic) tacos include Queso fresco rather than aged Greek cheese. You can find Queso fresco in supermarkets and flea markets that carry Latin food. Cheers and happy eating!

  27. weird, those look exactly like my most favorite tacos in Phoenix! and that’s saying something. Phoenix is a dream-land for taco lovers like myself. it’s best to go to the taco trucks on the side of the road.

  34. can’t go wrong with a taco. i love my shells crispy with a little sprinkling of parm cheese on the outside of the corn tortilla. i don’t know why it makes such a difference, but it does!
